For this dish you will require;
Ingredients:
1. Eggs 8 (boiled and shelled)
2. Onion 1 large (cut into small pieces)
3. Garlic 4 cloves (small size peeled and crushed)
4. Ginger 1 small piece (peeled and crushed)
5. Tomatoes 3 medium size ( diced/grated/blended)
6. Tomato paste 1 table spoon
7. Spices 1/2 teaspoon of each of the following; pilau masala, garam masala,
tropical heat mixed herbs
8. Dhania for garnishing
9. Soya sauce 2 table spoons
10. cooking oil 2 table spoons
11. Royco mchuzi mix 1 table spoon
12. Water As required
Procedure:
1.In a large sufuria (sauce pan), fry the onion with the oil until its turns golden brown.
2. Add the garlic and ginger and fry for a few more seconds.
3. Add the tomatoes, stir the mixture for about 5 seconds and cover the sufuria with a lid.
4.When all the tomatoes are thoroughly cooked add the tomato paste and stir, at this point be careful not to leave the sufuria unattended because the tomato paste tends to stick easily, in-case it does, add a little water about 2 table spoons and stir well.
5. Now you can add all the spice i.e pilau masala, garam masala, mixed herbs and stir for about 2-3 minutes.
6. Add the egg and stir.
7. Pour the soya sauce in and stir.
8. Add the royco and stir continuously until the stew is thick.
9. Lower the heat, add more water slowly until you achieve the thickness you want, cover and let it simmer for about 4 minutes the turn off your stove.
10. Garnish with some dhania and serve.
This curry sauce can be served with rice,spaghetti, ugali with some greens.
