Githeri is a Kenyan staple food enjoyed by many, it’s
basically maize and beans mixed together. Here is how to make your Githeri
sweet and delicious.
1.
Pre-boiled maize and beans mixture
2.
Pre-boiled potatoes
3.
Cabbage sliced
4.
Carrots (chopped)
5.
Garlic and ginger crushed together
6.
Large onions sliced
7.
Dhania chopped
8.
Capsicum (pili pili hoho)
9.
Royco (1 table spoon)
10.
Tomatoes or tomato paste
11.
Cooking oil
12.
Salt to taste
Procedure:
1.
In a large cooking pot (sufuria) warm the
cooking oil then add the onions until golden brown.
2.
Add the garlic - ginger paste, dhania, capsicum,
carrots and stir for about 3-5 minutes.
3.
Add the tomatoes or t.paste and stir until they
are well cooked.
4.
Add the maize and beans mixture and stir it
until they are evenly coated.
5.
Add the potatoes and cabbage and cover with a
lid to allow the cabbage to cook well.
6.
Dissolve the royco in a half cup of water and
add to the Githeri.
7.
Lower the heat and continue stirring for some 3
minutes.
8.
Cover for 3 more minutes and turn off the heat.
9.
Serve while hot
The pre-boiled Githeri are found in many leading
supermarkets.
