How to make pilau




Pilau is  delicacy enjoyed by many, just like art there are many ways of preparing it depending on one`s taste buds. Below is one of the ways that  I love to make it, hope you will enjoy.





Ingredients:

1.  Meat (beef/chicken/mutton/goat) - 1/2 kg
2. Rice  - 1 kg (4 cups)
3. Large onion -1 (chopped)
4. Garlic - 4 large cloves (crushed)
5. Ginger  (crushed)
6. Pilau masala - 2 table spoons
7. Cardamon   -1 table spoon
8. Whole spices ( cinnamon, black pepper, cumin seeds)
9. Cooking oil
10. Water - 9 cups

Procedure: 

1. Heat the oil in a cooking pan, add onions and fry until golden brown
2. Add the ginger and garlic and fry abit
3. Add the meat,  little water and cover for the meat to cook through
4. When the water is finished, add all the remaining spices i.e pilau masala, cardamon, whole spices and stir until you get the sweet aroma filling your whole house
5. Pour in 8 cups of pre-boiled  water
6. Add the rice when the water in the pan is still boiling and leave it on high heat for about 10 minutes
7. When the water level is equal to the level of the rice, cover the pan and reduce the heat to low for another 10 minutes
8. Switch off the heat and and let it stand for 5 minutes and serve.


Tips:
- I normally don`t use tomatoes/ tomato paste in my pilau but if you wish to include it the best place to add would be after step 3 when the meat is well cooked before step 4.
- Before adding spices ensure there is not water in the cooking pot, spices cook well in just oil and you get the sweet aroma easily.
